Mal-u Kitchen

SONG,FANG-GU

Kalibuan Village in Xinyi Township is a simple and peaceful Bunun tribe. Because it is located at an altitude of 850 meters in the northwest of the Yushan Mountain Range, the tribe can not only overlook the Batongguan Ancient Road, but every household can also see Yushan Mountain when they open their doors.

Kalibuan Village is also the hometown of Ibi, the founder of Slow Noon Kitchen. After graduating from junior high school, Yibi left the tribe and went north to study and work. He did not return to the tribe until he was 32 years old.

At that time, 伊畢 wanted to open a brunch shop in the tribe, but due to insufficient resources, he first engaged in tourism and agricultural product marketing in the tribe. It happened that seven years ago, Yi Bi saw the government’s million-dollar entrepreneurship plan, so he wrote a plan and applied for it, and finally got the opportunity to set up Slow Lunch Kitchen.

The name of Slow Noon Kitchen is taken from the Bunun word "Mal-u", which means to stop, stay, rest, and pause. 伊畢hopes that guests can stay in their small restaurant, relax and enjoy their delicious food.

As the main theme of Slow Noon Kitchen, 伊畢 chooses "wild vegetables" that can be found everywhere in the tribe, such as Showa grass, large-flowered saltwort, wild amaranth, and welding vegetables. These are things that Yibi has been eating since he was a child, but they are rarely used in dishes in modern society. Therefore, he hopes to integrate and stimulate wild vegetable culture with modern cuisine to create a brand new flavor of cuisine.

However, even though the restaurant was successfully established, 伊畢was very worried about business problems at the beginning. "We are located in the deep mountains of Taiwan, in the villages of the deep mountains, in the corners of the villages. Will there be no customers?" Unexpectedly, with word of mouth from customers, Google reviews and Facebook check-in posts, customers have continued to come, and even on holidays, the restaurant is often fully booked. Yibi has to change the restaurant system to a reservation time system to solve the problem of full occupancy.

Whenever 伊畢 sees guests giving Slow Noon Kitchen good reviews after their meal, or leaving the table in a mess with no food left, 伊畢always wonders what on earth they did to make guests willing to come from afar? But he thought they must have done something right, which allowed the Slow Noon Kitchen to quietly survive for seven years in the mountain tribe.

Therefore, although 伊畢 humbly claimed that he didn't know what he did to make customers continue to come up the mountain to visit Slow Noon Kitchen, we know that there is only one answer, and that is 伊畢 and 賤狗's dedication to cooking, which makes Slow Noon Kitchen a unique restaurant and makes customers willing to spend time and patience to go there specifically to enjoy the most unique and delicious dishes.
